
Ingredients
500g medium-sized shrimp (peeled and cleaned; tails optional)
¾ cup all-purpose flour
¼ cup corn flour (optional for extra crispiness)
1 egg
¼ cup cold sparkling water (or ice-cold water)
Salt + black pepper
A squeeze of lemon juice
A pinch of paprika (optional)
Vegetable oil for frying (sunflower or corn oil)
For serving:
Lemon wedges – Chopped parsley – Tartar sauce or any preferred dip
How to prepare
1- Season the shrimp:
In a bowl, season the shrimp with salt, pepper, lemon juice, and paprika. Let it sit for 10 minutes.
2- Make the batter:
In a separate bowl, mix the all-purpose flour, corn flour, egg, and cold sparkling water. Stir lightly until you get a light, lumpy batter — don’t overmix, as a light mix ensures crispiness.
3- Heat the oil:
Heat enough oil in a deep pan until it reaches around 180°C (test by dropping a bit of batter — if it bubbles, it’s ready).
4- Fry the shrimp:
Dip each shrimp into the batter and immediately fry until golden and crispy (about 2–3 minutes per batch).
5- Drain the excess oil:
Remove the shrimp and place them on kitchen paper to absorb excess oil.
6- Serve:
Serve immediately with a sprinkle of parsley and lemon wedges.
